When I was a child I always look forward to my grandmother's cooking. She wasn't the type of grandmother that baked sweets all the time but used to hand make many of her dinner meals. As a small child the home made food process didn't really interest me much like it did my sister who loved to help in the kitchen. On occasion my grandmother would create no-bake chocolate peanut butter cookies. She learned the recipe from her mother and passed it down to her grandchildren. I loved their sweet taste and their moist texture. None of my other friends at the time had ever had them before and so they felt special to me and I enjoyed bringing them into school and share them.

The true history of the no bake cookie isn't very clear and accurate. They were created long ago when foods were cooked over an open flame by common folk. There is a story that states that an old peasant farmer came into the house after grinding oats. He tripped over a loose rock and accidentally spilled some oats into his wife's chocolate candy she was making over the fire. She thought her candy was ruined so she started to throw it out. She poured the mixture onto a pan on the table and discovered a great new tasty treat. That is how the no-bake is said to have originated.
Over the years the no-bake cookie has gone by many names from cow patties, and many others but my family have always simply called them no-bakes. They are called that for the obvious reason that you don't need to use an over to bake them. You do need to cook them over the stove though.
I have bought them from the store before but will not eat them that way anymore. They are dry and crumbly and just don't taste that good. Home made is the only way to make these cookies. They may have the nick name “lazy cookies” but are not always the easiest to make. These cookies are mostly improvised recipes with several variations. My family makes chocolate peanut butter no-bakes. They are very temperamental and if you do not cook them correctly they will come out dry or will not be able to harden properly into a cookie.

The way my family makes it is this:
Ingredients: 2 cups of Sugar 4 table spoons of cocoa 1 stick/ ½ cup of Butter 1 cup of creamy peanut butter (crunchy peanut butter makes it dry and crumbly) 1 tablespoon of vanilla extract 3 cups of plain oatmeal You will also need wax paper to set the cookies on to dry and harden. |
Instructions: Bring to a boil, in a heavy saucepan, the sugar, cocoa, butter and milk. Let that boil for about one minute, remove from heat, then add the peanut butter, oatmeal and vanilla extract. If you don't do this part right with the exact ingredients then it will not turn out right. Once fully mixed drop it by the teaspoon onto wax paper into small cookie shapes. You can put it into molds and allow it to dry in certain shapes for cute cookie designs. Once it is completely cooled and hardened, enjoy. |
